Easter is here and we have a couple of lovely things to make to make your Easter tables look fabulous.

The first are these amazing Easter cakes.

Brilliant aren’t they?  Yet so easy to make – all you need is a bit of patience really.

Whip up a batch of mini fairy cakes, following the usual recipe and bake in mini bun cases or a small bun tray.  When they are all baked and out of the oven and cool, cover the tops with butter icing.  The add a round blob of lemon curd on top to look like an egg yolk.

The real trickery comes with the egg shell casings.  To make these simply melt some white chocolate (carefully in a microwave in short 20 second bursts) and pour into an egg shaped mould.  You could use one half of a plastic egg – or buy a special mould.  Roll a thin layer of the chocolate all around the egg and then leave to cool in the fridge.  You might find you need two layers. Be patient and when completely cool carefully ease the chocolate out of the mould.  We found a speckled white chocolate which looks even more realistic as egg shell.  Don’t worry if some break when you take them out of the mould as they can be ‘hatched’ eggs later on!

Now place the chocolate egg shellso n top of the mini cakes.

Then have fun arranging the cakes with their egg shells on a plate (as shown).  Crack some of the shells and place some yellow chicks round and about – some hatching and some who have hopped out completely.  Just gorgeous!

Easter Trees

This is such a simple but effective idea to make a centrepiece for your Easter table.  Find a branch from the garden or park.  Pop it into a pretty bottle or vase (or you can use some playdough or clay to weigh it down if you want to place it in a larger bowl or basket).  Then simply hang some pretty Easter decorations – shop bought or homemade – to the branches.  You can be as creative as you like – adding ribbons or chicks – whatever takes your fancy.  This is a lovely activity to ask the kids to help you with.  They are bound to come up with some ideas for extra added touches too.
